Once in a while I have a craving for lightly sweet but healthy muffins, and the steps below will show you how to make cranberry and orange rind muffins, that your family will devout in no time at all.
Make sure to pre-heat your oven to 400 degree before baking.
Step One: Soak 1 1/2 cups of dried cranberries in 3 tablespoons of freshly squeeze orange juice, and set it aside for one hour.
Step Two: Combine 2 cups of all purpose flour, 1/8 teaspoon of salt, 1/2 cup of fine sugar, and 1 tablespoon of baking powder in a large bowl. Create a well in this bowl.
Step Three: Beat slightly 2 large eggs with 1 cup of milk, 6 tablespoon of sunflower/canola oil, and grated rind of one small orange together.
Step Four: Pour liquid mixture into dried ingredients bowl, and stir them up.
Step Five: Gently fold in the cranberries mixture
Step Six: Greased your muffin pan, or lined them with cupcake liners.
Step Seven: Spoon your batter into the muffin pan to over half way and allow the muffins to rise
Step Eight: Bake for 20 minutes, and allow 5 minutes for the muffins to cool before serving.
This recipe makes 12-18 muffins depending on the size of your muffin pan. My family loves them and I hope yours too.
